Off-Season Bliss

With track season over, I’ve been soaking up some much-needed downtime with friends and family. I recently helped set up Graeme’s classroom and indulged in plenty of ice cream. I’ve been taking walks by the river to enjoy the fresh crisp fall air and of course I couldn’t miss the Huskie Homecoming game! Cheering from the alumni tent brought back so many great memories.

This slower pace of life has given me the perfect excuse to spend more time in the kitchen, experimenting with fall recipes like these pancakes. There’s just something about the warmth of pumpkin spice that feels like the ultimate comfort after a busy track season.

Ingredients

  • Pancakes:

  • 2 cups flour

  • 3 tbsp brown sugar

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 2 cup buttermilk

  • 1 tsp vanilla

  • 1 egg

  • 1/4 cup butter, melted

  • 3/4 cup pumpkin

  • 2 tsp cinnamon

  • 1 tsp ginger

  • 3/4 tsp nutmeg

  • 1/4 tsp cloves

  • Pumpkin Spice Glazed Pecans:

  • 1/4 cup brown sugar

  • 1/8 tsp salt

  • 1/2 tsp pumpkin pie spice

  • 1 tbsp water

  • Cream Cheese Greek Yogurt Topping:

  • 1/3 cup cream cheese

  • 1 tbsp milk

  • 1/2 tsp vanilla

  • 1/3 cup Greek Yogurt

  • 2 tbsp icing sugar

Directions

  • Pancakes: In a large mixing bowl, combine the flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Mix well.
    In a separate bowl, whisk together the buttermilk, vanilla extract, egg, melted butter, and canned pumpkin until well combined.
    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
    Preheat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
    Pour 1/4 cup portions of the pancake batter onto the hot griddle. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  • Pumpkin Spice Glazed Pecans: In a a small saucepan, combine the brown sugar, salt, pumpkin pie spice, and water. Heat over medium-low heat until the sugar is dissolved, stirring constantly.
    Add the pecans to the saucepan and stir to coat them with the glaze. Cook for a few minutes until the glaze thickens and the pecans are well coated.
    Remove the pecans from the heat and let them cool for a few minutes. The glaze will harden as it cools.
  • Cream Cheese Greek Yogurt Topping: In a bowl, whisk together the cream cheese, milk, and vanilla extract until smooth.
    Add the Greek yogurt and icing sugar, and continue to whisk until the mixture is well combined and creamy.
  • Assemble: Stack pancakes with a dollop of cream cheese greek yogurt topping between each pancakes. Top the stack of pancakes with a scoop of pumpkin spice glazed pecans and drizzle with maple syrup.
