Tropical Sunrise Benedict: A Miami-Inspired Twist for National Egg Day!
Today is National Egg Day, and what better way to celebrate than with a dish inspired yet again by my travels. After competing in the NACAC Championships, I found myself with a long layover in Miami, so we made the most of it by heading to a brunch spot I’d been following on Instagram for ages. The menu was massive with anything and everything you could think of and everything was plated very “instagram worthy.”
This Miami brunch spot had a vibrant atmosphere and flavors to match, but the dish that really stood out was their unique twist on Eggs Benedict. It combined sweet, tropical guava with savory, crispy prosciutto—a delicious combo that stuck with me long after the meal. As soon as I got home, I was inspired to recreate it in my kitchen, and that’s how the Tropical Sunrise Benedict was born.
This dish is a tropical twist on the classic Eggs Benedict, combining rich poached eggs with the sweetness of guava and the salty crunch of prosciutto, all served on a warm crispy waffle. It’s the perfect balance of sweet and savory, and it brings a little slice of Miami sunshine to your breakfast table.
Tropical Sunrise Benedict

1 batch Mini Waffles (see notes for recipe)
4 slices Proscuitto
4 eggs, poached
1/4 cup Manchego cheese, grated
1/2 cup guava Jam, heated
Chives
Directions
- Make the waffle batter according to instructions (see notes for the recipe I use)
- Prep Ingredients: Take out all the ingredients ahead of time so they are ready to go. Measure out proscuitto, cheese, and jam.
- Prep your water for poaching. If you do not know how to poch eggs click HERE. While the water is heating up, I start cooking my waffles scooping a couple of tablespoons of batter into the waffle maker at a time. When the waffles are almost done cooking, start poaching your eggs.
- When the waffle is done cooking, place one slice of proscuitto on top of the waffle followed by one poached egg. Sprinkle each egg with greated cheese. Heat up the jam in the microwave for 20 seconds or until runny and drizzle on top. garnish with chives.
